Australian finger lime/Caviar lime

A shrub or tree with small ovate leaves and stiff thorns. The thin, light green, slightly curved citrus fruit has a loose, green to pinkish pulp consisting of spherical juice-filled vessels.

Due to the loose flesh of the finger lime, when this citrus fruit is opened the almost spherical juice-filled vessels form pearls like caviar. The pulp is therefore often referred to as “lime caviar”.

Thanks to the “caviar” nickname, our chefs naturally like to use these tangy fruit pearls in dishes served in the restaurant.
