Averrhoa carambola

Star fruit

Small evergreen tree with pinnate leaves, each with 5 to 13 short-stalked, finely hairy, green leaflets approx. 4 cm long. The small pinkish-white flowers grow in panicles in irregular groups. The fruit is a five-ribbed berry with a star-shaped cross-section and turns shiny yellow when ripe. The slightly translucent, watery pulp contains several elliptical brown seeds in a gelatinous seed coat.

The fruits, which are usually harvested green, are familiar as dessert decoration. Fruits matured on the tree, on the other hand, have a fantastically sweet flavour, with the tip of the star fruit being the sweetest of all. When fully ripe, however, they very quickly ferment and turn to alcohol.

At Tropenhaus Frutigen we harvest up to 300 kg of fruit every year from our ten star fruit trees. These star fruit are sold in the shop and used in the kitchen. Seedlings propagated from seeds are also available from our shop when in season.
