Low-growing herbaceous perennial with slightly fleshy leaves that are a deep reddish-purple on the underside. Okinawa spinach has bright, orangey-red, composite flowers that produce tiny seeds.
In China the red Okinawa spinach is very popular as a leafy vegetable or used raw to lend a nutty flavour to salads. Although it tastes slightly less strong, its red colour makes it appealing as an interesting alternative to spinach.
We dry the Okinawa spinach or give it to the kitchen, where it is often made into pesto. This herbaceous perennial also serves as a shade plant and understorey for our tropical trees.
