Kaffir lime/Makrut lime

Small shrub with thorny twigs and winged leaf stalks, giving the impression that the leaf is divided into two. The plant produces small, thick-skinned, warty citrus fruits that turn from dark green to yellow and contain segments with a low juice content.

As the fruits of the kaffir lime have very little juice, they are of little use. However, the strong-smelling kaffir lime leaves are much used. Their tangy citrus flavour is a mainstay of Asian cuisine. As it is forbidden to import fresh leaves, ours are very sought-after.

We use the dried leaves in our herbal salt mix or as a tea. The highly versatile leaves can also be used to produce a syrup or liqueur, and the kitchen always needs a steady supply for ice tea or curries.
