Rhizomatous herbaceous perennial with long, green, lanceolate leaves and reddish stems. It forms large yellow flowers with a large lip directly from the rhizome in compact, scaly inflorescences. The flowers are followed by red seed capsules.
Black cardamom is used as a spice, similar to the better-known green cardamom. However, the larger dark capsules are earthier and tart, reminiscent of conifers. They are traditionally dried over a fire, which imparts a smoky flavour, and are often used in meat dishes and stews.
As it is very vigorous, we use this rare cardamom to provide attractive green foliage to fill in gaps in the tropical landscape.
