Although sturgeon meat is still largely unknown in Switzerland, it is part of every celebratory meal in Russia, together with caviar. The interest of the local restaurant and catering business in warm, smoked and fresh sturgeon has increased lately, however.

Sturgeon meat is white, has a firm consistency and is low in fat. A special feature is the lack of bones, which makes the preparation easier.
