A new chapter is opening in the history of delicacies: Caviar from Siberian sturgeon that live in Frutigen in pure, naturally warm mountain water from the Lötschberg.
These fish provide an exceptionally fine tasting caviar, which is lightly salted in the traditional manner (Malossol caviar).

As a result of the pursuit of the delicacy caviar and the blocking of many breeding rivers, most of the 27 species of caviar worldwide are threatened with extinction.

From the viewpoint of the    World Sturgeon Conservation Society (WSCS), the pressure on wild stocks can be reduced through sustained fish farming.

Once the stock of sturgeon has been built up, the Tropic House Frutigen AG will be able to offer coveted caviar in quantities suitable for the market (after about six years).
